These earthenware vessels are made to assist in maintaining a chill on a bottle of wine.  Fill the vessel with water.  When the water is seen coming through the clay, pour the water out, place your wine bottle in the chiller.  The water evaporating from the clay will cool the clay thus cooling the wine bottle.
